Santoku is a first of its kind in West Africa. The design is influenced by eastern philosophy and combines ancient culinary customs with contemporary cuisine and service. Opened on 14 June 2012, the restaurant, bar and lounge, private dining room and terrace offers a menu crafted by the team behind London’s Nobu in surroundings designed by interior architect Hubert de Givenchy, Paris.
Head Japanese Chef, Daisuke Yoshizaki’s menu offers a contemporary Japanese sharing concept where many dishes lean on the smaller side, and diners are encouraged to order two or three per person and share. Dishes are brought to the table as soon as they are ready, and sharing ensures that diners have a wide and varied tasting experience, selected from across the whole menu.
Santoku’s chefs introduce Western flavours to traditional Japanese cooking techniques and as far as possible source local, Ghanain, seasonal produce. Food is presented on specially commissioned handmade Japanese earthenware and glass crockery in over 25 different styles, as well as Ghanaian wooden bowls.
A private dining room, separated from the restaurant by sand-blasted glass screens with intricate bamboo overlay, can be booked for up to 16 guests who can sample the chef’s bespoke menu on a handmade reclaimed wood table.
An outside terrace offers seating to a further 100 guests who can experience Santoku’s modern interpretation of Japanese cuisine and drinks under Ghanaian skies.
Since opening, the bar at Santoku is fast establishing itself as a destination in its own right; Accra’s place to ‘see and be scene’. Guests can enjoy ordering food from a small selection of sharing dishes from the light bar menu as well as the full sushi range, alongside the most creative and innovative cocktail list in Ghana. The cocktail menu features drinks made only from premium international spirits and fresh fruit, all made to order. Here diners and drinkers will find the signature cocktails of its curater, master mixologist, Blake Walker.
The drinks menu is extensive, featuring award-winning sakes, Japanese whiskies and beers as well as super premium international spirits and liquors. Specially selected wines from small producers and the worlds best champagnes.
